- Grade 1 (G1): The “Competition” Standard: This is the crème de la crème. To be G1, a coffee must have almost zero primary defects (no black beans, no sour beans). But it’s not just about looks; it must also score brilliantly on the cupping table (typically 85-90+ points), showing distinct character, high acidity, and clarity.
- Grade 2 (G2): The “Specialty” Standard: Most high-end specialty coffee you see in cafes is G2. It allows for a tiny margin of physical imperfections compared to G1 but still delivers a phenomenal cup profile. It is often the “sweet spot” for value—incredible flavor without the ultra-premium price of a competition lot.
- Grade 3 (G3) & Beyond: Historically, G3 was often reserved for Natural (Sun-dried) coffees, while Washed coffees were G1 or G2. However, today you can find amazing Natural G1s! Generally, G3 through G5 are considered “Commercial” grades—great for blends or darker roasts, but lacking the distinct clarity of a Specialty lot.
